I have heard that if you index every single page and string on your website in your sitemap that it can work against you ? - can anyone offer any advice?

Yes and no. It very much depends on the exact structure and link-structure of your site. There is no general rule. My advise however would be to focus on the "user" rather than "seo" itself. That will work for both.
