How accurate is this method?
Can I, for example, get a precise number for the number of searches on google.com for a specfic keyword?

The Adwords Keyword tool is as accurate as any, due in part to the volume of data Google processes month-on-month.
Take the figures with a pinch of salt, but they are useful as approximate indicators of potential search capacity.
Other keyword tools, wordtracker/trellian etc all turn up different results and are very much platform specific.
Adwords is Google focused, whereas other tools factor in multiple engines.

None of these tools are 100% accurate. If I search for "website development" or website marketing, then it doesnt necessarily imply that I am looking for website marketing services.
It could be possible that I am checking my rankings on search engines. Also, it could be possible that someone was checking PPC position of his/her ad on Google.
Therefore you can get some approximation on traffic, but cannot rely 100% on it.
