Everyone knows that celebs can help build a brand's profile by drawing attention to it, especially through viral videos, but do they really help by translating into sales or subscriptions?

Celebraty endorsment fits into marketing activity (creating awareness and interest in your brand) rather than sales activity (creating desire and then action - buying!). So I don't think that you can assume that simply because a celeb endorses your brand people will automatically rush off and buy the product.
I suspect that the answer to your question is yes, if executed well. But then you could say the same thing about any marketing device. The whole point is to create more awarness and feed your businesses sales funnel. Could a celeb on a viral video do that for you - possibly. Depends on the brand, choice of celeb, target audience and execution.

Yeah, I know what you mean. There’s no such thing as bad PR, but sometimes people care more about the celeb more than the product. I mean, look at gotvmail’s video set with Gary Busey:

I mean, there are 40 videos, but until I looked up gotvmail itself or heard this song, most of the people I knew didn’t know gotvmail was a virtual phone system provider. But other times the attention is also good, since it leads to curiosity. Even if you couldn’t care a whit about priceline, you still remember Captain Kirk emphasizing “negotiation” when booking trips. And so on.
