I am already familiar with Squiz.co.uk but was wondering if anyone knows of any other companies providing an open source CMS solution that have a track record of working with traditional publishers to take their offline products online?

You could talk to Charles @ Trafika - they have been working with publishers for a long time - incl. Dennis Publishing. They have a CMS they use for sites for publishers and it is quite mature and has specific technology for your industry.
